 Welcome to the course!

Welcome to Food Microbiology, Safety and Hygiene. This course introduces you to the microorganisms associated with food and how they influence food safety, quality, spoilage, and foodborne illness. You will learn how microorganisms grow in foods, where contamination comes from, and how food can be handled, prepared, stored, and served safely.

Throughout the course, you will explore important topics such as food contamination and cross-contamination, food spoilage and preservation, foodborne infections and intoxications, food adulteration, temperature control, personal hygiene, cleaning and sanitation, and food-handler responsibilities. You will also be introduced to Good Hygiene Practices (GHP), Good Manufacturing Practices (GMP), and HACCP as important approaches to managing food-safety risks.

As you progress through the course, you will take an active role in your own learning. Through readings, discussions, practical activities, case studies, and real-life hospitality examples, you will learn how to identify food-safety hazards, prevent contamination and foodborne illness, and maintain safe and hygienic food-service environments. By the end of the course, you should be able to confidently apply food microbiology, safety, and hygiene principles in professional hospitality and food-service operations.
